Best whole Chicken in a crock pot

The Butler’s Chicken

This is the best damn chicken you will ever taste.


First you take a chicken. Rinse it good with cold water and set it in your crockpot. Cut off the excess fat around the butt.


Mix together a nice rub for your chicken. My rubs are always different but for tonights chicken I used
1 fat tbls sea salt
1 tbls of granulated garlic
1 tbls of smoked papricka
1 tsp ground smoked cayenne pepper
.5 tsp ground white pepper
.5 tsp ground black pepper

Add more peppers for some heat if you want. This is mild enough for a five year old.

Rub this mixture all over your chicken: on top of and underneath the skin and in the cavity.


Cut up 1 stick of butter. Put it under the skin and in the cavity. Save a little butter for the stuffing.


Cut up 5 or 6 plantains. You want these plantains to have a lot of black on the peel.


Cover plantains with honey, then sprinkle with cinnamon and nutmeg. Add remaining butter. Mix with hands and continue to add the more honey, cinnamon and nutmeg until they look good.


Shove these puppies in the cavity of the chicken.

Nuzzle the rest of the plantains around the chicken. I like to lay the breast down in the crock pot yet some people do breast up. Sprinkle the rest of you seasoning on top and turn your crock pot on high.



Cook for 4 hours.

Garnish with lime.


For sides I like to make coconut rice and green veggies.
1.5 cups of rice
3 cups of water
1 can of coconut milk




Steam up some broccoli or green beans and you got yourself a meal!

Sorry there are no after pictures. We always get too excited about eating and forget to take pics. The smells and tastes will control you! Next time I make I will add pics finished pics.
